Toffee Apple Cupcakes – With Cake Angels*


As some of you probably already know, we love baking! We’re not great by any means but we try our hardest to make tasty treats for any occasion. We were planning on making some Halloween themed bakes for our blog and coincidentally we were contacted by Fiddes Payne about their new Halloween cake decorations! For those of you who don’t know, Fiddes Payne have an online store where they sell a variety of items all the way from cake decorations to cake kits. They kindly sent us a range of Halloween cake decorations from Cake Angels so we were super excited that we had an excuse to make some spooky cakes. For us, nothing says Halloween like toffee apples so we thought we’d challenge ourselves to make some toffee apple flavoured cupcakes!


Obviously we aren’t skilled enough to come up with a recipe ourselves, so we searched the internet to find the perfect recipe for our cakes. We got the recipe for the cupcakes here and the recipe for the toffee icing here, so all credit goes to them! Here’s the ingredients you’ll need for the cakes:

For the Cakes-
150g butter
150g light brown sugar
140g self-raising flour
10g cornflour
1 tsp baking powder
3 eggs
1 tsp cinnamon
2 Granny Smith apples
3 tbsp caster sugar
Zest and juice of half a lemon
1 tsp vanilla extract

For the Icing-
2 tbsp butter
3 tbsp milk
110g brown sugar
120g icing sugar
1/2 tsp vanilla extract

The recipe we used was really easy to follow. The method involved mashing up apples and putting them into the cake mix, which is something we’ve never done before. We thought that the apples in the cakes would make them go soggy, although we were wrong as the cakes were just right in our opinion. They had a yummy, spicy cinnamon taste, kinda like the taste of those deep fried apple pies you can get in fast food restaurants!

The icing that we made went perfectly with the cupcakes. To make it we used a different sort of method to what you’d usually use for a buttercream. We boiled the butter and milk with brown sugar to make a toffee flavoured syrup, this mixture was then added to the icing sugar and then piped onto the cupcakes. It complimented the apple flavoured cupcakes perfectly and tasted like toffee/fudge. We’re so happy with the outcome of the icing and the cakes as a whole as they are something unique but so easy to make!


Of course no cake is complete without some kind of decoration! To decorate our cupcakes we used the Cake Angels decorations that Fiddes Payne kindly sent us. We received 4 packs of icing decorations, 2 pots of Halloween sprinkles and a pack of marshmallows. These decorations made it so quick, fun and easy to decorate the cakes and we love all the little faces, especially the little witches! The Cake Angels decorations are perfect for any Halloween party cakes and can be found in supermarkets, they’re affordable too which is even better!

  1. They sound delish. Love the skull deco and spiders! Re apples in cakes and sogginess, try and locate a recipe for apple teacake and other European-style apple cakes, and you could be pleasantly surprised with the results! I grew up with such recipes so know they work.
