Christmas Jumper Gingerbread Men with Cake Angels*

img_9376December is fast approaching and that means that before you know it, it’ll be Christmas! One thing we love doing around Christmas time is baking festive inspired treats whenever we get the chance. Last year we made Candy Cane Cupcakes which were delicious! We were talking about what festive themed treats we could make this year, when we came home from work to find a surprise delivery from Cake Angels! If you read our Toffee Apple Cupcakes then you would know that the guys at cake Angels kindly sent us a box of goodies to cake decorations to use in a blog post. The box we received this time had enough to make two different treats, so here is the first post of two – our gingerbread men in their fancy festive jumpers, because nothing says Christmas like ugly jumpers and gingerbread men!


To make the gingerbread men we found a recipe in the ‘Commonsense Baking’ book. It was really easy to follow and wasn’t very time consuming either! Here are the ingredients you will need:

For the Gingerbread-
125g unsalted butter
60g soft brown sugar
90g golden syrup
1 egg
250g plain flour
30g self raising flour
1 tablespoon ground ginger
1 teaspoon baking soda

For the Decoration-
1 egg white
250g of icing sugar
Food colouring gels
A few drops of water

Start off by preheating your oven to 180 degrees and lining your baking trays! To make the gingerbread dough you need to cream the butter, sugar and golden syrup together  until the mixture is light and fluffy. Next add the egg gradually and beat the mixture. Once you’ve done this, sift the dry ingredients into the mixture and stir it all together. You should now have a gingerbread dough! Now comes the fun part, all you need to do is roll out the dough, cut out your gingerbread men and pop them on a baking tray. We baked ours for around 12 minutes so that they went a nice brown colour!


For the icing we wanted to try a technique we’d never used before, flooding icing! To make it we mixed 1 egg white and 250g of icing sugar. We then added a few drops of water and a red gel colouring. We simply put the icing into a piping bag and first piped the outline of a jumper. We then filled in the outline and used a cocktail stick to smooth it over. The icing didn’t go as well as planned but considering we’d never actually used this technique before we don’t think they look too bad! The decorations that Cake Angels sent us were then popped onto the icing to make cute little Christmas jumpers for our gingerbread men!

Overall we’re really happy with how these festive biscuits turned out, they were delicious and we think they look pretty cool!
